ABOUT RYE

We buy rye, for the production of our organic flour; from approved growers in the Czech Republic with a guarantee of the grain origin from organic farming. Rye is widespread especially in Eastern, Central and Northern Europe, where it reached with the arrival of the Slavs after the end of the Bronze Age. Areas with a higher altitude are the most suitable for its cultivation, which is why it thrives especially in the foothills.

WHAT IS IT SUITABLE FOR

Fine wholemeal rye flour can be used for making homemade bread and a sourdough starter; and for baking both savoury and sweet pastries. Rye rolls, rye pancakes, honey cake and other recipes are popular. Rye flour can be used alone or in combination with spelt or wheat flour. For the right leavening of the dough, it is important to add one part of light spelt or wheat flour to every four parts of rye flour.
